Fricasseed is a culinary term which refers to the process of cooking meat or poultry in butter or oil and then being stewed or boiled in its own juices. Some synonyms for the word fricasseed include braised, fried, stewed, boiled, poached, sauteed and slow-cooked. Braised is a cooking method where meat is first seared and then slowly cooked in a liquid, and therefore can be used as an alternative to fricasseed. Fried is another term that can be used interchangeably with fricasseed, where the meat is cooked in hot oil until golden brown. When meat is blended with water, broth, or other liquids, it is referred to as stewed or boiled, which are synonymous with fricasseed.
